Tasting Notes
The estate's oldest vines produce a lemon-coloured wine with a wonderfully developed nose of stewed apples and cream; on the tongue, that cream is nicely balanced by minerals and fine acidity.
Food Match
The extra development and concentration of this wine make is an excellent partner to smoked fish dishes and also to creamy seafood dishes and even veal in creamy sauces.

Vineyard
All the grapes for this wine are hand picked from the Domaine oldest vines, some as old as 40.

Hebridean Peat Smoked Salmon 

Peat Smoked Salmon has a robust, aromatic flavour and a wonderful taste that has no equal. The bold flavour has a remarkable creamy finish and no harsh notes.

The starting point for this lovely product is the finest quality Atlantic salmon grown for Hebridean in the cool clean waters that surround their island home.  The fish is simply smoked with traditional peat.

Scottish farmed salmon has a world-wide reputation for excellence and we source ours from reputable farms rearing fish in the pristine clean waters of the Hebrides. Experience has taught us that smaller salmon make the best smoked salmon, with a firmer texture and much less oiliness.
