Tasting Note
The Clos du Chapitre is a monopole, located on the appellation Chapitre and entirely closed with a stone
wall. This plot of more than 1 hectare is located just behind the family house. Fine, elegant and structured,
the Clos du Chapitre shows a very Burgundian expression of Pinot Noir.
History
Domaine Jaeger-Defaix is owned by Didier and Hélène Defaix,of the well respected Chablis estate.
With 100% Premier Crus vineyards, situated just south of the Chassagne-Montrachet appellation and
producing wines using organic viticultural techniques (the estate is currently converting to organic
certification), this is considered one of the foremost estates of the Rully appellation.
After speaking to Didier and Hélène Defaix for just five minutes, you start to realise what makes their wines so special. Not only do they have holdings in some of Chablis’ best-situated vineyards; their attention to detail in vine growing and winemaking is astounding. Their focus has been on taking care of the vineyard through improving soil structure, biological pest control and painstaking vegetation management, and their cellar work is similarly precise. All this enables the potential of each “terroir” to fully express itself through fine, powerful and distinguished wines, which have a succulence of texture married to serious intensity of flavour that makes them delicious young yet also capable of considerable cellaring.
